The reason for yeast is to raise the bread (increase volume) and perhaps to impart flavors (as is true for beer).  But in the end, is there any real difference in the final outcome by choosing one yeast form over another?

but typically even the new folks who join the fray on TFL will do their own research before asking basic questions.  That is what the search box in the upper right is designed for.

Alternatively I and others use a search tool like Google as well.  Many of the fine folks here on TFL are way nicer than I am, and have been helping you so far.  TFL is wonderfully welcoming environment but you really need to begin doing your own research first.
