Buckwheat Crepes, hard to make?

Reading up on Buckwheat flour since I ordered some late last night, I learned that Crepes are are made from this. With some white AP flour added, maybe?

I only seen this made on random TV Shows., The last one was Fringe. They looked tricky to do right. In particularly adding other ingredients on top and then folding afterwards.

Now I have some AP white flour, however my preference is to use whole wheat. Is any wheat really needed? I ask due to a friend and his daughter are Gluten Intolerant.

Crepes are just a very thin form of unleavened pancake.

Super easy and any kind of flour or combo will work fine. The kind of flour determines the texture and flavour.

I make crepes every weekend, spread cottage cheese on each one, roll it up, sprinkle with fruit, spices and maple syrup. 

100% Buckwheat versions are traditional from Brittany, France. The key difference with buckwheat versions if I remember right is keeping the batter overnight in the fridge. I've made them once. Very tasy but also quite hearty. They have more savory fillings like whole eggs inside.

Take a look at King Arthur Flour site for recipes. I don't remember where I got mine.

He used a Saucepan. Not some Crepe pan. Thanks for mentioning keeping Buckwheat batter overnight in fridge. He did the same thing.. This would have never occurred to me.

looks good with exception to the sugar.  He called the baking powder cinnamon but that's pretty obvious.  One cup of buckwheat seeds/grain will be lighter in weight than a cup of buckwheat flour.  I don't have buckwheat grain on hand or I'd weigh a cup for you. I might just go out and get some myself.  The recipe makes it easy and weighing ingredients can help calculate the carbs.  Keeping a notebook helps.  

Adding spices is a good way to improve upon flavour. Read the labels on the cinnamon, there are some natural sugars in cinn. but the spice can also be cut with sugar by producers to fill up the jar as the price goes up.

They are a bit more difficult compared to regular crepes because they don't hold together quite as well as regular ones, but they are not all that complicated.
