Wholemeal burger buns

Wholemeal burger buns

Looking to make some basic burger buns with wholemeal (wholewheat) flour. Don't want it to include any dairy please. Also what is the ideal pre baked weight for each bun, every recipe I find is different and sometimes come out too small. Thanks in advance

Take a ww bread recipe and play with portioning to get what you want. Enjoy!

This recipe is pretty good, as for the size,  pretty much up to you how large you want them to be. Hope this helps you out.

I had the best buns I've ever had in my life from a book called "Vegetable Kingdom". I struggle to finalize recipes as I don't use dairy nor eggs, though I am including vegan butter lately. I am getting better though, I made a cinnamon swirl loaf with currants today based on this recipe. I have become a teff addict, I find the consistency addicting and it adds a little oomph and flavor to vegan breads.

I used King Arthur bread flour, which although is white, says it is ground from hard red wheat berries, which are whole grain...

Adjusting for whole wheat probably something like this:

3 cups whole wheat flour, 1/4 cup teff flour, 1/4 almond flour, 2 Tbsp sugar, 2 tsp yeast, 3/4 fine sea salt, 1 cup + 1 Tbsp water, 1/4 cup melted coconut oil. This makes 6 monster buns, or probably 8 smaller buns. I use an Ankarsrum so first add all the liquids then add the solids... knead for 8 minutes. Let rise for 1.5 hours. Deflate, cut into 6 equal sizes, form buns with lots of surface tension, let rise for 1-2 hours. Bake at 350F for 25-30 minutes, then brush the tops with some more coconut oil while cooling.

I mean these buns are truly gigantic, unfortunately I can't recall the grams but I weighed the 6 buns before they rose and went into the oven.

Note: I cannot vouch for this recipe when utilizing 100% whole wheat flour. I don't think I'd do that, I'd probably do 1/3 whole wheat flour and 2/3 bread flour, or all purpose.
