Hi from Scotland

Hi all, just started baking bread at home using the FWSY book by Ken Forkish. Excited to take part in the forum!

Hi to you from Scotland too! I'm in Edinburgh (although moving away in a few months). Where are you based around here? Which flours are you using, and what sort of breads do you bake? Looking forward to seeing you around here on TFL, the friendliest website ever!

Hmm, I need to add flours to my profile! So currently I'm trying Marriage's strong flours -- using the white and wholemeal and doing the Levain thing. I have the very strong marriage's too, for raising protein/gluten in combo flours, but not used any yet.

I don't think I've tried the Marriage's flour, but it is quite popular. Whenever I can, I try to get the local Scottish flour, in particular Mungoswells flour from East Lothian, although it's not universally available - give it a try if you see it somewhere. Also I recently got the wholemeal (very weak, but very tasty!) from the Scotland the Bread Balcaskie Landrace (recently available from the Weigh to Go shop on Leith Walk).

Ah great, thanks for those flour tips -- good to find out some local flour sources! I think I heard about Marriage's through this very website!

BTW if you bake a lot and have space to store it, getting a big bag of bread flour from Realfoods delivered is really worth it. I had a 16 kg of Mungoswells bread flour from them that lasted around 6 months, and saved me some money and also many trips to the shops :) Now I'm leaving too soon unfortunately and wouldn't use it up. And in general, I think Realfoods has the best selection of different flours here that I've seen locally.

 I bought a 16kg sack of the marriage’s flour as I suspected I would end up getting through it reasonably well!
