DECK OVENS - Doyon 3T2
Looking for modular bread ovens. Modular is useful because the doorways are small so being able to bring in one deck at a time is crucial. Steam injection a must. I guess I would prefer gas.
I will be producing brioche rolls, biscuits, various loaf breads, foccacia, a billion croissants and anything else yummy.
Found a Doyon 3T2 setup, 2 decks, 6 sheet pans. If anyone has thoughts about those?
