Panettone with commercial yeast (SHOCK HORROR I KNOW)

Hello friends I am new here 

my name is Elan, I love panettone and in previous years I made it from scratch using a stiff starter etc and it was wonderful, everyone in the family would get some panettone and it was great. Then I had a baby, Who is now a toddler, so that means I have NO TIME or brain power well some brain power running at maybe 50%

So tbh I know I will not be able to keep up with all the sourdough feedings etc etc but I want a great panettone still. Can this be done?! Does anyone have a GOOD recipe for panettone using yeast, I tried in the past before I started using sourdough have been dry... please someone help! ?!

I've made numerous bread from this baker's collection, as you can see in my blog. His recipes guarantee excellent results.

His "trick" is using commercial yeast with a concentrated lactic acid sourdough (CLAS), which you can make in 24 hours, and it makes very flavorful bread. Baking with CLAS has enabled me, a very busy mom, to enjoy baking again. I summarized the baker's steps in this blog post to show my friends who love his bread (that I gifted to them) so much that they can make it, too. I hope it will be helpful to you as well.

That sounds like a great idea. All I can currently manage is a weekly very low knead sourdough. This sounds very interesting!

This yeasted recipe from the professionals looks very promising! You can make it even better by using 5% of the flour from CLAS to replace some of the AP flour! And I'd follow Rus's one-day approach to handle the dough.  If you properly control the temperature, you will get excellent flavors without overnight fermentation!

Carol Field's Italian Baker has a commercial yeast panettone that I can vouch for.

Also there is no shame in using commercial yeast.
