Pizza oven (Blodgett 911p) Steam Generators/Source?

Hey folks -- I just bought a single deck Blodgett 911 to increase the scale of my sourdough/artisan bread baking at's in transit and this has been maybe one of three things I've been really excited for during this whole COVID...

As I'm preparing the garage for this beast, wanted to poll folks here to see if they have any experience hooking up steam generators to a pizza deck oven (or more specifically, Blodget 911P).  I stalked the forums and looks like jimbtv has some experience... (not sure if you can help weigh in here!).  I did purchase the steam injection jets option, so it's ready to receive steam.  Just need to find a good source for it.

Are there any hacky/more cost-effective solutions that might produce good sourdough/artisan bread results?

Hi! I just recently purchased this same oven to do something similar. Still need to get it changed from gas to propane so I haven't been able to use it yet. I wonder if you figured something out for your steam creation?? I have heard of others on this forum using a pressure cooker, assumably on a hot plate or stove top...and hooking up a pipe from the top of the pressure cooker that goes into the oven and through the steam jets. My husband is a super handy man and he has some sort of plan he is brainstorming to create steam but I am wondering how its going for you? And you are working in a garage so what do you have for ventilation? Hope things are going well for you!

Wow I was not expecting someone to be in a similar situation as me!

I still haven't quite figured out the steam set-up yet... I am still searching/experimenting.

I've tried the following:

  • Attaching Earlex steam generator for wood bending to the steam jet: Not enough pressure to inject the steam
  • Manually pressing a steam cleaner to try to inject steam into the steam jets: Marginal results
  • Surrounding my loaves with Loaf pans filled with boiling water: This worked somewhat, I think this is the most viable option, but I may need to look into shallower pans. My hypothesis is that the steam is going over my loaves so I'm not getting the good oven spring.

It seems that there is too much venting to trap in the precious steam.
