Bran vs Germ

Hi all, I've just mixed dough for Chad Robertson's 60% Kamut and I freshly milled all flours. After adding 70 grams of bran as I thought I read in the recipe, I realize it called for 70 grams of GERM- not bran.  I assume there isn't a way for me to really differentiate when I'm home milling. At this point I realize the dough will likely not develop great gluten structure and will probably be dense. That is ok, but I'd love to understand if I can somehow get this equivalent in the future with my mockmill..

And welcome to the world of home-milling. I've been home-milling for a few years.

To adjust this loaf with the added bran instead of germ, if it's not too late, just add maybe 3 grams of oil that the raw germ would have added that the bran doesn't have. This loaf (page 68 of T3, right?) is high hydration, so the drier bran won't make much difference, but if it feels dry, add a tsp of water to adjust, and see how it feels.

By the way, he does mean raw germ, not toasted, as per page 21, right hand column. I wondered about that because toasted wheat germ is more common in US groceries than raw. But I suppose toasted could be made to work.

By the way #2, you can't home mill the medium strong (bread) flour he calls for at 20%, second flour, column 2, page 68. He did not make a typo there. He did not mean "whole" wheat flour, then sifted. 

He explains what he means by "medium strong wheat flour" on page 24, bread flour with 11-12 % protein.

No matter how much we sift home-milled flour, we can never get "close enough" to actual white flour such as All Purpose or Bread Flour.

The "high extraction" stuff, yes, not exactly, but more or less, with sifting home-milled flour.
