Crusty outside, crunchy inside? Where art thou?

How do I make the crunchiest whole wheat bread?

I use a recipe where the outside is great! Very crusty. The inside, as is typical for bread, is soft and fluffy.

I want a crunchy, crumbly, deeply cooked inside. Is there a way to do it?

I don't even think it's possible to get a crunchy inside due to the certain process of baking bread. The only way I can imagine is toasting slices until it reaches your desired crunch point. 

But don't use a toaster, use olive oil and a little salt, roast in the oven or pan and top with some fresh tomatoes or other veggies.

Just make bruschetta ;)

slice and spread out evenly on a rack or two and low bake until dry. Once dry raise the temp to toast or darken the crumb.   - Melba toast -

Not exactly what you describe but perhaps adding some seeds and whole grains will give you a different mouthfeel. The crumb itself will still be soft, but biting into more crunchy pieces might be a step up. Toasting will only enhance this.

Another great idea. I think i will stick to toasting the slices for now. Once I get heartily sick of that, I will start adding nuts and seeds :))
