Another clayton jewish rye

I baked another bernard clayton ny deli rye this morning.  I'm obsessed with getting these as authentic as possible. Although it's fun to tweak. The dough mixes a bit stiff so I add a touch of kosher pickle juice to get it where it should be hydration-wise.  

 This time I formed a sandwich loaf. We'll see how it goes over with my New Yorker friends.  They loved the last one btw.
