Those loaves have a lovely crumb. I gave a Hamelman 5 grain levain on the go. I hope it turns out as nice as yours.
I'm sure it will! I've made my way through most of his breads with pre-ferments and have just started delving into the levain chapter. I made three batches of the Vermont Sourdough in a week, and each batch just got better. I give most of what i make away, lest I weigh a bazillion pounds, so the folks around me were happy, as well. Tomorrow I'm trying the Whole-Wheat Bread with a Multigrain Soaker, substituting rye chops for cornmeal. It's one of the one's I haven't tried yet. I love the 5-grain recipes btw - I'm a multigrain kind of guy. ;-)
