The old "better than expected lucky loaves!"

GoodbreadAfter getting back from seeing extended family and diving back into baking there were some serious set backs in bad loaves made for a couple days. It seems apparent now that it was the starter needing some time to get moving again.

Last nights bake had bread that was amazing! These are the loaves I dub is beyond my skill level that keeps me interested in learning more! 

Front loaf is a 30% wheat mix at 79% hydration and the back two are 100% white flour at 82% hydration. The white loaves were scored, the smaller loaf was pushed in on itself in a smaller dutch oven and lost the scoring. The larger one has some lines showing threw. Maybe it wasn't scored deep enough as well as having more oven spring than expected?
