Timer Controls For Hobart Proofer

So, we put our croissants in the proof box overnight, from frozen. They get about 12 hours in a 68 degree enclosed environment and then about 3 hours at 80 to 85 degrees (with humidity). I would like for the proofer to kick on at 2:30 am so that the croissants are essentially ready to go by the time we get in at 5am.

Is anyone familiar with digital controls, for a Hobart two door proofer that can do this? Currently, it has temp/humidity controls as well as a timer for it to shut off, presumably.
