Butter or Olive Oil?

The recipe for a 50/50 white/brown loaf using my Panasonic bread maker suggests using 15G of butter for a medium sized loaf.  I would prefer to use olive oil instead.  Should I replace the butter with 15ml of olive oil or increase the amount of oil?

Use 3/4 of the amount. So 15 x 0.75 = 11.25g olive oil.

I usually use 80%, but it is the same thing. You might want to add an extra few grams of water, but I don't think it matters. The bread will taste/feel a little different though (even using extra virgin vs light olive oil makes some difference). Remember that butter is solid at room temperature and melts in the heat of your mouth. Oil does not react the same way. It still tastes great, just not the same.

Thanks Maverick, I will also try using 80% and increase the water from 280 to 290 Ml.

To date, I have found the taste to be better when using olive oil rather than butter l.  I tried oil seed rape.  It was OK but the loaf seemed to be a bit heavier and had a stronger taste.

I tried 50/50 white and wholemeal flour and again it was good but the family favourite seems to be 50/50 white and brown flour.

I don't know if there will be enough of a difference between 11.25g and 12g of oil for you to notice. Same with the water. The hydration will be close enough with that small of an amount. Really the other 20% of butter also has some milk solids along with the water. If you are trying to make the same bread, then maybe 3ml can be added. 10ml is fine too, so is doing nothing. A lot of times you need to adjust the water based on the environment and flour used, and 10ml is well within the norm for this. If you are using whole wheat flour, I would think a little extra water wouldn't hurt. I would say that trying different amounts of water would be a good place to play around with your family favorites.

Thanks again Maverick.  I have now tried the 11.25 and 12g on two loaves and increased the water by 3ml and am pleased with the results.  Could not tell the difference with the small increase in oil.  I also made a loaf and substituted rape seed oil.  While this loaf was OK, the olive oil loaves were slightly lighter with a better taste.
