Gluten Free Diets
The question of gluten free diets and how a bread baker might cope with that has come up in the past. Some have noted in previous posts that they or someone they know tolerate sourdough bread quite well as opposed to yeast breads. Perhaps the addition of the Lactobaccili coupled with longer fermentation times reduces the polysaccharides that are causing GI symptoms.
