Deck Oven

Good Day, 

I wonder whether anyone is in the position to help me.  I have read many posts on this site referring to temperature settings of 1,2,3 etc for top and bottom oven settings

I am new to this deck oven baking, and would like to bake from cakes, cupcakes, tarts and through to bread and rolls.  My oven setting however has a top and bottom setting from 20 degree celcius to 350 degrees celcius and the same for the bottom. 

Is there anyone who perhaps knows some sort of norm, I can fiddle and play around with settings once I have the basics right. 

Say for instance, I use a recipe that calls for a sponge cake to be baked at 180 degrees celcius for 25 minutes, can anyone help with what I would use in the deck oven?

And then the same for say for instance bread - a recipe states 40 minutes at 180 degrees celcius, I very much would like to know what I would set my deck ovens at. 

I hope this is not too stupid a question, but I am at my wits end with ruining my bakes

I have been baking out of deck and hearth ovens for years.  Currently I bake all rich things (pastries etc) at 180 C and bread at 230 C.  I'd set top and bottom the same, but depending on hot spots or how it cooks in general, I might lower the bottom heat just a touch, but that depends.
