Hi,

 

I'm new to this forum. Baking exclusively tartine recipes at the mo. Have tried various things, such as converting my gas barbecue to an insulated oven, then tried to inject steam with a handheld steamer!!

Done the cooking in cast iron pots, and most recently gone back to my domestic electric fan oven, with a tray full of camping gas ceramic lava rocks. these don't produce any kind of dust, and if you pour boiling water on them in a preheated oven. They seem to work. By some miracle my oven doesn't seem to leak. This is either coz I haven't generated enough steam or because it actually IS reasonably air tight. The only drag is, i can only get one loaf in at a time (unless it's in a tin)

Sounds like you are having lots of fun and success with your bread baking.  You have some great ideas…and your lava rocks seem a better idea than tossing ice cubes into the oven.   Happy baking!
