Howdy From Doha, Qatar
Quick intro, Canadian, living and working in Doha (previously Houston > Damascus > Brunei), married, two grown daughters.
Like artisan skills that can eat/drink, do not like shop bread as unknown ingredients and no self satisfaction of making / eating own. Made lots of breads over the years but joining forum as need to up my game.
Only flours I can find here are white, brown and chapati.

You'll find you're in good company here at TFL, as many of us feel as you do about making our own breads (and other things). I did chuckle at your description of the flours available locally - white, brown and chapati. :) Not sure what white and brown may be, but I looked up chapati and found it is a whole grain flour from a hard durum wheat and generally ground finer than most whole wheat flours sold elsewhere.
You'll definitely encounter a few challenges, but persevere!
