Gluten Free, Dairy Free, Chocolate Cake

I signed up to make a gluten free, dairy free, chocolate cake this weekend. I think this challenge is out of my range. Any recipes or ideas would be great!

What you describe will not be a cake. It will be..."something".....but it won't be a cake. Why bother??

One version of MW cup cake coming up!

in a large mug...

  • one chicken egg
  • 2 Tbs cocoa
  • 3 Tbs oil
  • 4 Tbs starch
  • 4 Tbs water
  • 4 Tbs sugar
  • 1 Tbs nut flour (coconut?)
  • pinch of salt
  • a few drops of vanilla extract (optional)

Stir together well and pop into the microwave, high for 2 to 3 minutes.  It will rise straight up until all the liquid is gelled. Depending on greed one to three portions.

How about Flourless Brownies made with black beans? I've never tried it, but I heard it's good.

If it is last minute, Betty Crocker makes a gluten free cake mix in a box. Desparate times-desparate measures. If they ask for dairy or eggs, substitute any non-dairy milk and commercial egg sub available at the grocers.

PS A brownie may be a more forgiving texture fore those requirements. I have made the black bean brownies. Meh, as long as you eat them immediately. The next day heir texture is rubbery.
