Sourdough carrot cake

Well, the sourdough hamburger buns went over really well. I also made this sourdough carrot cake from King Arthur Flour website and everyone loved it! A nice way to use up some sourdough discard, if you have any. Next time I am going to try their sourdough chocolate cake.

variations of just about everything from cakes to cookies brownies and even pasta etc but never get around to making them very often with the exception of Rye SD cookies.  We love carrot cake, all cakes really. and this one made into cupcakes is especially enticing.  Bet it tastes great too.  Well done and

But I am not sure what exactly the sourdough brings to the cake. Acid for sure as the recipe only uses baking soda and it did rise nicely. What with all the sugar and oil, I don't think it exactly brought a distinctive sourdough taste to it. It didn't seem too sweet even though there is a lot of sugar. It is a very nice and tasty cake. I'm thinking that since you use spent starter that the flour in it is rather broken down, so maybe what it adds to the cake is a more tender crumb and the acid helps balance the sweetness.
