Can the bosch compact handle this 2 loaf ww recipe?
So I posted earlier about a secondhand bosch 450 compact mixer not working...i broke it somehow while opening it up to clean it:(
Luckily bosch compact mixers went on sale mother's day, I jumped and got a new one:)
I make this 2 loaf ww recipe in the secondhand mixer until I screwed up the poor mixer but ALWAYS fought the dough spiraling up through the dough hook and cover and creeping into the housing.
Now that I got a new mixer, I don't want to screw this one up too!
Please check my recipe and let me know if its too much for the compact to handle.
Honey Whole Wheat Sandwich bread
Biga- 454 grams ww, 1/2 tsp instant yeast, 340 grams water
Soaker- 454 grams ww, 2 tsp kosher salt, 396 grams whole milk
Final dough- 114 grams ww, 1 tbsp kosher salt, 4 1/2 tsp instant yeast, honey and butter.
I do mix in raisins, 5 grain/oats, sunflowers and buttermilk powder into the mix.
The total grams of ww flour is 1022. Adding ww and liquid ingredients equals 3.875 pounds.
Looking at the numbers, it should mix fine in the compact but why did it always climb up and through the dough cover and into the housing?
Is there something I can do to prevent it?
The Compact has a pretty strong motor, I don't think 1000 grams of flour will hurt it. In terms of dough climbing into the housing, there is a little white cap that goes on just before the dough hook, are you using that? It keeps dough from getting into that space. I think the issue of climbing relates to the hydration, and the total volume of the loaf and the speed. Where you using speed 2 ? I can't recall the biggest loaf I did, but I was more worried about the machine moving around on the counter than causing a problem for the motor.

Yes, I always use the white dough cover/cap but some dough still manages to climb and spiral up to squeeze through the dough cap!
I stop and scrap it down often but the bowl is pretty full with dough so it climbs back up quickly.
If the climbing relates to hydration, total volume and speed,
Total volume is 3.875 pounds plus the the mix-ins which are placed last- raisins, oats, sunflower seeds.
Hydration- liquids 736 grams, flour 1022 grams. I do add coconut oil and brown sugar instead of honey.
Speed is 2.
Do you think the compact Bosch can handle 12 cups flour and 4 cups liquid?
