To my fellow Ankarsrum owners

Hello all,

I have been using my Ankarsrum for several months.  The roller part that comes in contact with the bottom of the stainless steel bowl has become abraded.  The roller and scraper are both hand washed with dish detergent, but the the scraper is not showing the same kind of wear.   

The good folks at Ankarsrum USA have provided a replacement under the part's one year warranty.  

I'm just wondering, what kind of wear and tear have you seen on your roller?  How often have you had to replace your roller?

I've the older, DLX Assistent version. It is at least 10-12 years old, well used, and the roller is pristine. I put it in the dishwasher. 

Two ideas - one is that they just don't make 'em like they used to, or two is that there is something in your bowl setting, such that the roller is rubbing on metal when used.

my roller doesn't scrape the bottom of the bowl. I wash it in the dishwasher. 

I would check whether the position of the roller can't be changed, to elevate it a tad.

Karin, mine is probably 10 to 15 years old, the roller is in pristine condition.  I know there is a way to adjust the height of the scraper, not sure on the roller.

I own a newer model Ankarsrum (bought  last October)   and I just tested it and roller is just resting on the bottom of the bowl.  I thought so; but just now as a test,  I tried to put the roller on the pin without the bowl and it would just fall right off.    I haven't had any problems with it abrading at all.    I don't put it in the dishwasher.   I do use it very often.   What did the "abrading" plastic look like?  On the bottom of my roller the plastic isn't shiny like the top but it isn't falling apart or anything.

Hello,

The very bottom part of the roller looked scraped up and not smooth.  It's was not crumbling, but felt and looked grainy.  It got progressively worse with additional use.  Hope it was just a fluke.

I've had my Ankarsrum for about 6 months now and I LOVE it! Between making bread, pasta and cakes my roller gets used everyday and my roller still looks perfect.

My roller is pristine after 2 years.

If the roller groove is engaging the bowl correctly it can't wear at the bottom. If you are using a high enough speed when mixing/kneading the shape of the roller and the density of the dough underneath the roller prevents contact with the bottom of the bowl.

Assuming you aren't mixing concrete, bring up the speed of your bowl to about 3/4 speed. If you're mixing something that's abrasive I have no potential solution for you. I do let the mixer grind sugar into the yeast suspension between the roller and the bowl and it shows no wear. It sounds terrible though (abrasive grinding noise).

I have no idea if this can happen incorrectly, but be sure the roller is held against the arm when the pin is pushed down to engage it. Maybe it's not fully seated "up". Check to see that the roller groove properly engages the bowl, but now I'm repeating myself.

The bottom of my roller is smooth but not slick.  It feels as if it has been lightly sanded.  If I add salt to liquid and mix you can hear the salt being ground between the roller and bowl.  I know my clearance is tight but it does not seem to cause a problem.  I have checked to see that the bowl lip and roller are aligned.
