What to do with leftover croissant dough?
It's that age-old home baker's question, "Well I can't throw it away. So what do I do with the extra?" Well you make these little fruit pastries of course! They are in the style of abricotines however I didn't have any apricots so I filled them with a few flavors of jam (apricot, cherry, and blackberry). For a few of them I even made a crème d'amande with folded in sliced almonds! They turned out great. I know everyone at my office will love them!
