potato water sourdough- blister crustYum!
Came across this recipe by Teresa Greenway. although it is a white loaf it was delicious. Double hydration worked easily and dough was fairly firm and easy to shape at 68% hydration. Overnight retard as per recipe, only needed hour and half to proof then baked. Have no DO so steamed up oven well and happy with the result. Will make this again for sure - just wanted to keep on eating it!

we have a busy day tomorrow - hubby's shed is in "Blokes in Shed Ramble" and we are providing light refreshments (pretty basic though) so will be tied up for the day! :)

Not sure how I originally found this but videos were great and the recipe is given in one of them. The different way of dealing with the hydration was quite an eyeopener. My blister crust isn't as good as Teresa's so that is something to aim for.
We just scoffed down the bread and our guests that evening also loved it!! so a keeper for sure.

The method is really nice and the bread was delicious but perhaps some whole grain in it next time would be nice.
and that is of course how I found the videos! they were great!! I had absolutely no memory of where I found the recipe but your comment stirred the grey fluff up a bit and when I checked your post today I remembered. Hubby had gone out and I could sit there blissfully watching Teresa's videos. Your loaf was very nice indeed! I agree it would be nice with a bit of whole grain - there is always something else to try :)

Someone on this site inquired as to how to get crustier loaves. Someone, I cannot remember whom, responded and pasted in the link to the potato blister bread which is how I "stumbled" upon those videos. Then, I could not retrace my steps to whom. So, add me to the list of those with grey fluff in need of some stirring!
