Bakeries and ovens

During the next few weeks of spring cleaning and preparations for Passover (the ultimate religious requirement because you are compelled to clean every shelf, cabinet and closet), I am contemplating and reviewing bakeries and ovens. Strong opinions on bakeries and a sense of awe when seeing a nice oven.
