Can anyone give insight why Chad is adding in wheat germ to many of the recipes in this edition? It's never explained (unless I missed it).

Adding more flavor and nutrition to the bread without the bitterness and texture-impairing qualities of the bran. The bran is often used instead as a topping in the couche.
