Wheat malt flour?
I have been a homebrewer for many years and enjoyed baking on the side. As a result, I am used to fooling with different grains and generally have a few different sacks floating around at any given time. I have been grinding up hard white wheat for bread flour and it occurred to me that the wheat malt I have been brewing with might make a nice addition to bread. Has anyone tried using wheat malt for bread flour? This is commercially malted and kilned diastatic malted wheat sold for brewing. The sack I have on hand is this stuff: http://brewingwithbriess.com/Products/Wheat.htm#Red
