Bonjour !
I would like to introduce myself, and my small business that offers hand crafted artisan wood fired brick ovens. I come from the hotel industry having been a chef, I love to talk about gourmet food preparation, recipes, and that includes; but is not limited to pizza dough making, bread making, wood fired roasting, wood fired deserts etc. Also, being from France- my passion is brick oven building. I love to answer any questions about the building, assembling, of the ovens. Pretty much ask me anything about the ovens you own- or were looking into for yourself or your business and I will find the answer! Having grown up seeing my family cook with these ovens makes me passionate about hand crafting them brick by brick here in the United States, and would love to share my knowledge in this field of expertise. Hope to get to learn from the members in this forum as well!

Welcome to TFL from a former Texan (whose folks still live there)! Haven't you teamed up with Mike Avery for a pizza class? Seem to remember something about that in one of his newsletters. What beautiful ovens you create!
My stepdad is a former chef (though not French), and he and my mom have made plans to incorporate a wood-fired oven such as you make into a house they are building. I'll have to refer them to your website.

We recently had a wood fired pizza making class 2 weeks ago, and try to be consistent with a couple classes a month as we have a passion in cooking! Your step dad is already a step ahead of the game knowing how to make several cuisines in the oven i'm sure! All he needs is the oven. You get a sense of old world feel as you cook in them. I mainly love to eat wood fire cooking :-) I appreciate you letting him know about our company, and any questions he may have about a potential oven he can certainly give us a call as well.

That is a beautiful oven, indeed. I imagine you can use it year-round in Texas. Mine takes long winter naps from late November until late March. Wood-fired ovens are amazing and I love baking in mine. I am sure your post will generate some interest. Embth
Thank you, i appreciate your post very much! They are custom built, so they're all very unique. I would imagine the winters in MN cover your oven up a bit with snow! Yes, Texas is definitely a state where we cook outdoors quite often, though I just moved here from Maryland where we had similar weather as yourself. I grew up watching my family in France cook in wood-fired ovens, it became a passion of mine to learn to cook in them. My favorite thing to make in my brick oven is bread. So many different ways. Whats your favorite thing to make?
Do you build them outside of Texas? This is something I keep considering.
Yes we do! There are several ways to acquire one of our ovens. You get to choose to assemble an oven yourself! All we do is ship it, and we ship to all states, even Canada. If it is a project you've wanted to take on, we have a lot of oven options to choose from. Most importantly, they're made with tripple layer insulation, and when combined with refractory brick...you have an oven with possibilities of cooling off in 5-6 days! NOW, if you want it fully assembled, we ship them ready to place either indoors or outdoors. Its definitely something we enjoy all year round even in the most Brutal cold weather.
