FWYS - Saturday 75% Whole Wheat

 

Made this bread recipe a day ago. :) It was delicious! The crust is really crunchy, crumb is chewy. Since I don't have a Dutch oven (nor a proofing basket) I baked the dough on a cookie sheet so I didn't get that pretty bread on the cover nevertheless the bread is great!

For such a high percentage of whole wheat the crumb is impressive.

This is a recipe from Forkish's FWSY?

For a cast iron DO you might want to go to your local antique shop and dig around. I found one (without a lid) for $25. I put the dough on my 10" cast iron skillet, then put the DO over the skillet. Works very well.

is that yo can get fine results without having a bit of expensive equipment.  A colander or any bowl of the right kind makes a fine basket when lined with a rice floured smooth kitchen towel sot the dough doesn't stick.  No baking stone- no problem.  Just stack a couple of jell roll pans together and turn them over - instant baking surface,  Any .large metal oven proof pot can be turned over to use as a cloche to hold in the steam and imitate a DO.  A cheap turkey roaster makes a great DO too.  Even a foil turkey roaster can be used.  

And don't forget that all baking equipment from pans to stones to cloches to DO's can be found at Goodwill for a dollar on Dollar Thursdays - I found all of these things at Goodwill and for $20 you can have a complete range of quality equipment - you just have to be patient..

I didn't know I can use a foil pan. :) I'll try those first! Thank you. 

We do have steel pots but they have these black plastic handles that might melt. :P
