sourdough pullman loaf
Does anyone have a recipie for a sourdough loaf that works for a 9 inch pullman pan? I'm looking for one with a mild acidity suitable for a sandwitch bread with either a whole wheat or Multigrain presence.

I just started this recipe today!! :) Here is my question - when I mixed up the first bit, it's quite dry? I had to knead it together... and it did incorporate but I was surprised? Is this right? (the 15g starter, 24g milk... etc)

I think the idea is to have a stiff leaven so it doesn't produce as much acidity that a more hydrated one would over the strength building stage. At least that is what I understand from reading. Hope you loaf turns out well.

That recipe is from TX Farmer and she is an exceptional baker. Do as she says in the recipe and all will be well.

It was fantastic. We baked up 2 loafs in a pyrex because my pullman pan hasn't arrived ;) My 5 and 7 year olds proclaimed it perfect! We had homemade grilled cheese last night and as stated above.... PERFECTION :) Thanks! I feel the need to NOT TWEAK ANYTHING!

The loaf turned out just like I wanted as far as taste and texture goes. The only change to the formula was to add 20% white whole wheat and multiply everything by 1.5. Next time I will multiply by 2 because the loaf didn't rise to the top of the pullman pan to make a square loaf as planed. It is a keeper formula.
