another dependable recipe: Norwich SD
One of Mr Jeano's buddies expressed a wish for a loaf of sourdough, in the context of hearing another buddy was to be blessed with some rye bread. (The rye bread recipient had never eaten rye until he had some at our place). The buddy who wants sourdough commented his wife had gotten some at the grocery store and he'd really enjoyed it for sandwiches. (I will bet you almost any amount of money their local grocery doesn't carry unbleached flour, let alone bake any quasi-artisan bread).
I am pretty sure this stuff he's had is SDINO and told Mr Jeano, I don't think I'll retard these loaves, I dont want to give his tastebuds too big of a shock.
No crumb shot until tomorrow after buddy picks his loaf out.

...is that I am down to less than five lb. of AP and want to make some bacon fat gingersnaps. Mr Jeano might make the Andes candies cookies today. I need to make pastry for samosas today, too. I have to work tomorrow, so its highly likely no bread will be baked until strategic AP flour reserves are replenished late in the week. Perhaps I'll dig thru the pantry and see how close I can come to 16 grains... hmm. I know I have wheat, rye, corn, millet, barley, oats and rice. Where can I come up with another 9??? I'm pretty sure I'm out of spelt. Can I count red and white, hard and soft wheat as additional grains?
wheat as different grains - because they are. All the other grains can be found at Whole Foods in their bins or pasta aisle and at Sprouts. The local grains at Whole Foods are different for every region so Ramona Farms Pima Club and White Sonoran or Hayden Mills Farro and Desert Durum may not be available where you shop.
We love ginger snaps almost as much as Andes brownies but have never made Andes Ginger Snaps either? - especially with bacon fat!!! I just found my bag of hidden ginger snaps as i was typing this so I'm OK now :-)
Is a good 90 miles away. I do have some durum, forgot that. We'll see.
These don't snap but that's ok. I like store bought gingersnaps best when stale and soft. I added some crystallized ginger because you can't really have too much. The Andes are still safe in the fridge.
Bacon fat isn't detectable per se, but adds a sort of demonic depth to the flavor.
