FARMER LOAF/BAUERNLAIB (Austria)
This is one of my favorites from the recipe testing group to date. It has hints of fennel and caraway and overall just tastes great with a nice moist crumb. It's perfect for sandwiches or just about anything.
I'm not posting the other recipe from this group which was a Cider Rye since it didn't turn out the way intended and ended up with a gummy crumb.
Look forward to week 6 which I will start this weekend with a nice Black Bread.

I love the look of the crazing.. a little like tiger bread. I'll be starting a week 6 tonight..either a rye loaf or a crispbread. Haven't made my mind up yet. Happy baking!

Sorry, I can't give out the recipe as I'm testing it for an upcoming book on Rye by Stan Ginsberg. You will have to wait until next year for the book. Believe me, you will want to get this book as it has tons of great recipes for rye breads.

All the rye breads have looked wonderful. Ian, I agree, something about this one is quite intriguing... It will be hard to wait for Stan's book to come out, but to each of the testers, thank you for your input to Stan and for sharing your products in this forum!
