NCGS? In the olden times we called it hypochondria.
My 6'3" 210 lb. hubby is diabetic and would love to eat good sugar-free candy, but the sugar alcohols will nearly send him to the ER, because it is certain CARBS, not gluten, that many are sensitive to. A bread sweetened with them would make people suspect gluten, but that doesn't make them hypochondriacs. That isn't a fair label. All newborns in Italy are tested for Celiac disease and have been for decades. I'm an RN, and dietary concerns are carefully considered in all gastrointestinal complaints. There are lots of things that the human gut is sensitive to.
