Fragrant Swedish Rye
This has become a new favorite at our house. I found this recipe in the RSS feed and it is from Rosa's Yummy Yum's blog. She had adapted it from another blog site..and I in turn tweaked it to our liking. It has the zest of a whole orange, carraway and fennel seeds and sweetened with honey and brown sugar. It is just awesome toasted and I can imagine a great ham and swiss sandwich! By looking at the picture from her site, I think she must have use a light rye because her loaf is so much lighter in color than mine. I made the first loaf exactly to the recipe and it was very good toasted, but to my taste was too dense for a sandwich. This loaf represents my tweaking from strong flour (I used bread flour, is that the same?) to organic AP, used organic dark rye, added some vital gluten, and upped the yeast a bit. I would have tried it in my brotform, but I was out of rice flour and didn't want to chance wrecking it..the dough is a little tacky due to the honey. Check it out..I think you'll love it!!

is for Rosa? Thank you so much for sharing a great recipe.
Paddyscake, Swedish rye is one of my favorites. I love the orange and honey--never tried it with brown sugar, but how can that be a bad thing? This sounds and looks delicious. I can't wait to try it (assuming today really is Oven Fixing Day #2.)
I can sub out the rye flour for ww 1:1 and make this same bread? I'm loving the idea of using orange zest, honey and fennel seeds (maybe I can get away with an eensy bit of caraway seed)!!!???
Way to go on that beautiful loaf and the pretty piccy you took!!!!
Hello to my colorful friends..
BD..hope this finds your oven all cured..you say day #2..sounds like a major fix! The loaf has a slightly sweet taste..nice though. I can see it with some of the sugars reduced. The orange zest sends it over the edge. Maybe some dried cranberries and walnuts would make for a great bread on Turkey Day and sandwiches the day after??
BZ..I don't see why you couldn't sub whole wheat..sounds good to me. Thank you, my husband takes great pictures for me, he's a peach!!

I wasn't trying to take credit for this recipe..I mentioned the blog site and the link was already provided above..my apologies if I have offended
It was obvious to me that you were properly crediting the recipe, Paddyscake, because I went looking for it. Rosa's site is beautiful, isn't it?
I agree with browndog, you have nothing to apologize for.
The bread looks wonderful!
