egg-free sweet potato soft rolls
I thought I would post some soft rolls that we often bake for our kids' lunch boxes. As they are knotted, they are quite flat and fit into their lunch containers nicely. We have a number of food allergies, so everything is nut and egg-free, but the sugar from the sweet potato contributes to a nice browning on the top. The rolls are nicely soft from the sweet potato, and can be cut in half well to make sandwiches. Kids love to help make them also. Click here for the full recipe.

Lovely rolls, must make them myself sometime - after all, I often incorporate beetroot into my bread, and zucchini bread is very popular.
