coconut flour?
Someone gave me a large bag of coconut flour and I can't seem to make anything with it. It doesn't work at all for any type of bread, that I have found. I haven't had much success with tortillas or any other flat breads. Is there anything I could make with it or any recipe that might work? Thanks.
Have you tried mixing it with AP or bread flour to a 50/50 mix?

You can mix brown sugar and coconut flour and fry it until its nice and sticky and use it to stuff inside the buns. Let me know how is this coconut flour or is it dessicated coconut?
It is coconut flour. I tried mixing it with wheat flour and it made a really crumbly dough that didn't resemble anything like bread.
I bought 6# thinking I could sub 25% in a loaf of SD.
DID NOT WORK, lol.
But it makes great pancakes, cakes, muffins and crepes.
high in fibre no gluten. Combine (fold into) beaten egg whites. Use as fillings between dough layers perhaps with a pudding base. Use on outside of loaf or as dust for banneton.

in my experience it's not very good when trying to sub it in for wheat flour in recipes, at any percentage. So I would think that finding dedicated recipes that take into account the properties of coconut flour might be a better bet. :) look in gluten-free baking sites.
