WHOLE WHEAT WINDOWPANE
NOT as nice a white one, but @ 86% hydration and a 4 hour autlyze you can still get pretty good results. This was 50% whole-wheat flour after 2.5 hrs of bulk with (3? 4?) sets of s/f and air knead. I'll post a crumbshot tomorrow!
It is amazing how dough sorts itself out by resting and some S&F.
I used to knead a lot before my Rheumatoid Arthritis, the no knead is just wonderful.
