Please allow me to introduce myself...

Hi, I am an artisan without an oven.  Much less a stone. That is, I have a minuscule europro (!) toaster oven that reluctantly accepts 8" sq or 9" round receptacles.  Help relieve my frustration with novel suggestions!

You probably are wanting to bake hearth-style loaves, I'm guessing, since you mention that you don't have a stone.

But you should be able to bake using loaf pans in this small oven.

every summer when I take it outside to bake since it is so hot in AZ.  Mine is 7" high by 1' square.  It has regular bake to 500 F and convection too.  It took a while to figure out a good steaming method but now use 2 of Sylvia's steaming cups catty corner with an oval shaped loaf between at 750 g.  This set up puts the best crust on bread bar nine and make fantastic hearth style loaves that blister like crazy.  You can make some great bread in a toaster oven once you figure it out.  The only problem is that sometimes the top starts to get too brown and then you just turn over the loaf on its top - problem solved :-)
