I've been reading Josey Baker's blog for a while, he's an interesting fellow...and I hear from friends in San Fran that the bread is indeed amazing. He has a book that's going to be released in a couple days on the 15th, looks like it's worth checking out.
But definitely intimidating, too. The bread display in the cafe - that's like what I am doing, I have a bread basket in a local natural food store.
I like the idea of the "Toast of the Day", something I would go for as a customer (much more than for a "triple GF hazelnut soy latte moccacino").
