12 Grain Bread Help
Hello there,
After looking rigorously at the extensive information and fantastic community I'm decided to become a first time poster here on the forums.
I've made maybe half a dozen loaves of bread just in a typical bread machine and I like the bread but it just doesn't compare to the fantastic artisan breads available at bakeries at the current city where I'm a student. Back at home(not at the city) I've always feasted on fantastic 12 grain bread with flax seed from a local baker but here in the city I cannot find this bread anywhere. So I'm going with the solution of attempting to make and learn to bake it myself.
Even though no 12 grain bread exists at the city bakeries, I was able to find 12 grain flour with flax seeds for a reasonable price nearby. I used the suggested recipe with the flour and used my bread machine and I was somewhat pleased with the taste and look but it still didn't compare to the bread I crave back at home nor any of the bakeries around.
In addition, I have recently purchased a baking stone and now want to transition from the bread maker to kneading and baking my own bread to become a bread artisan enthusiast.
I was wondering if anyone has any fantastic 12 grain bread with flax seed recipes I could try out for my first hand made loaf. Another question is before my baking stone arrives what can I bake my bread on in the oven? I do not have a bread pan and was wondering if a cookie sheet would suffice?

Lots of recipes there. Just put in exactly what you said, i.e., "12 grain bread with flax." See what comes up.
I'm having trouble making up twelve even counting in the more obscure varieties!
In these "multi-grain" type breads/cereals/etc, various seeds are typically included and counted in the mix. With this considered, it's very easy to come up with various combinations.
Just do a search for 12 grain bread or 12 grain cereal, etc.

I imagine that each flour miller adds a different blend of grains (and seeds), but here are a few ideas of what would be in 12-grain flour. For more specific information, contact the food processor of your favorite 12-grain bread.

be a bit provocative, because this is somewhat of a pet peeve of mine. Of the 12 ingredients you have listed amaranth (I'll admit to not being sure about it), soy, flax, sunflower seeds, buckwheat and sesame seeds are simply not grains. So saying that a bread is 12-grain, when it is, in fact, made from 6 or so and has some add-ins is an outright lie.
