Open Crumb: I finally nailed it!
Now I'm going to work on oven spring!
Actually, this is a "Biscotti Chip". My wife asked me to make bite-size portions of a favorite savory biscotti, Parmesan-Black Pepper, to serve with Christmas dinner appetizers and wine. I rolled long, skinny dough logs, and cut them like normal-size biscotti.
