I'm experimenting with those little packets of salad toppings. This is my basic white bread,(for one loaf), I add about 1/3 cup sugar to sweeten it slightly, 2 tablespoons of cinnamon and one of those 4 oz. packets of salad toppings. For this loaf I used Salad Pizazz PomeCranate Honey Walnut Infusion. There are all kinds of combinations, even some that are just nuts and seeds.
I let my yeast bloom in warm water, then add the sugar and cinnamon and one cup of flour, and really beat it with a fork til it's a smooth paste. Then I stir in the packet and let it sit for about 10 minutes to hydrate. Next comes enough enough flour to make the dough, knead it like regular bread. (The salt was in my first cup of flour).
It makes a really nice change, and the little packets make it quick and easy. I've also tried using brown sugar in place of white, and have even added oat flour to a couple of loaves. Add orange zest to the dough when I used an orange cranberry packet, just depends on what I have on hand.
