My first 'celebration bread'
Hi All,
just checking in with what I've baked today. It's my second loaf since rediscovering baking - A fruit, nut & cinnamon loaf. although I have loads of room for improvement I'm quite pleased with the crust & crumb and the fruit & nut dispersal. It smelt Devine cooking & I took it off of the baking sheet towards the end of the bake & put on the oven shelf to get a nice crust all the way round. I couldn't wait for it to cool to taste. Next time I will cut the cashews a little smaller.

It was rather tasty, even if I do say so myself and my Mum tried some and said it was Scrummy. It was nice and light & very good toasted. I'm going to have some for breakfast tomorrow.
I just played with the ingredients of Peter Reinhart's recipe for Cinnamon Raisin Walnut Bread in the Bread Baker's Apprentice if you want to give it a go.
Next time I may use Very Strong Bread flour for a slightly better spring rather than just normal bread flour & see if it makes a difference (I've never used very strong before I saw it in the shop today so thought I may give it ago)
