should see the etoffee for tonight's dinner... 3 smoked meats, no brisket either, combined in a recipe passed down through history by Cajun and Creoles of long standing who by marriage to live the resulting culinary abomination! I'm waiting for the better half to get home from work to dig in ....Patience comes to those who wait a long, long time. I hate waiting or standing in line ....has to be a military thing. Happy baking
Well the sainted wife chose to spend her last night in the US before her Biz trip with her workmates (sometimes I wonder why I try) than have dinner with me, but that leads to exploration. Tonight I am braising chicken with Olives, Mustard, Honey and Lemon. I am looking forward for the flavour combination.
Well it is coming to the cooler months, albeit still warm, here in SoCal. I love slow cooked meats, braised meats as so my favorite things to eat. I am seeking out a REAL butcher to get some Osso, Pork Belly, Rabbit, Veal Breast, ect ect ect…… Love cooking this food, it goes so well with good crusty bread.
