Need help making WW bread with minimal ingredients

Can someone tell me if I can make a loaf of bread similar to the Columbia bread in Glezer's book but with 100% WW? I do not want to use white flour, but I am looking for a recipe that I do not need milk, eggs, etc. Thanks!

Ok, so nobody has a suggestion so I took it upon myself to congure up this recipe.

Monday: Started with Glezer's sourdough starter. 10g starter, 30g water, 50g flour

Tuesday: Took 90g of refreshed starter and added 50g water, 150g WW flour, 10g spelt flour

Wednesday: Mixed 600g WW flour, 60g spelt flour, 450g water, 16g salt, 100g liquid malt extract (brewers type) Mixed together, kneaded for 10min, autolyse for 1 hour. Worked in levain. Followed normal bread making methodology.

The bread came out great. Sorry no pics, not a huge rise, but flavor was good (will use less malt extract or sub molasses). I am eating a ham sandwhich today with my bread. This is definitaly my favorite wheat bread to date. (that I have made)

 Comments anyone?

I added 30g of Vital Wheat Gluten. OOps. I noticed a huge difference in the rise that is for sure!

I would like to make a nice big loaf of sandwhich WW bread that has the crumb comparable to Brownberry's Ice Box Whole Wheat if I could.
