Broken Hearted Sourdough Crepes
These are great crepes to make using up your sourdough discards.
Crepes make wonderful little packages. Fill them with fruits, cream, cheeses. Savory crepes are wonderful too! Let your imagination run wild.
Mike loved the I served him after dinner. He plans on putting one together for himself tonight. Yes, even he can do it.
Make a plate piled high with crepes. Just refrigerate them and, they should keep for a couple of days. Separate them carefully and fill with your heart's delight. You can even freeze them. Though I haven't tried that, yet.
Sourdough Crepes - I used a Caputo 00 Flour Sourdough starter
You will use about 1 cup of sourdough starter and it will be deluted with milk to a very thin batter consistancy.
1 Egg and 1 Egg Yolk Beaten
2 TBsp. Melted Unsalted Butter
1/4 tsp. Sea Salt
1/4 to 1/2 Cup Non-Fat Milk - I used 2% -
Mix well adding more milk if needed to get a very thin batter.
Refrigerate the batter for about an hour before using.
Put a small dab of butter into a heated non-stick pan. When it bubbles and melts, pour in about 1/3 cup batter per crepe.
Tilt pan and spread the batter around to make a thin crepe. Cook about one minute until the edges come away and you can lift the crepe with a medal cake frosting spatula.
Flip and cook about another 2 minutes. Keep them light and not browned.
Lay them on a plate while you bake up a batch.

Katie was an abused rescue. We got her at about 2 yrs. old. She was always happy and never knew how sick she was. She was 10 yrs. young.
I've missed posting on many blogs lately. Hope to catch up. I loved the whole wheat bread you made.

to hear about Katie's passing. Good apprentices are so hard to come by and one that sticks around so long really is a blessing. My condolences. The beautiful crepe can't make up for your loss but it sure looks delicious and hopefully will dull the pain.
I still have my two apprentices, Bella and Joey. We'll all miss her very much. Everything I've baked lately seems out of sorts...crepes were easy and Mike enjoyed them very much. I baked a lot of sweets this month...but most were enjoyed by my grandkids. Favorite Pumpkin pies for my grandson who left for college this past week and his first time away from home. His brother will be sleeping with 2 dogs...one will surely miss him. Pets are wonderful!

Mike just called from work, still raving about the crepes. When he came in from work last night; I had one ready for him. He wants another tonight. Very easy to make and keep well too! Can be filled and topped with some real tasty goodies. My personal favorite is a creme cheese and fruit ,warmed sauce on top....or you can get fancy and light up a Crêpe Suzette : ) It doesn't have to be discards..fresh is what I had left over here.

I thought I would post these simple crepes made with either fresh or leftover levain because, I haven't seen any made this way posted on TFL. It's always good to have a use for extra sourdough. They kind of had me wondering about rolling, toasting and, stuff them up for a side compliment dish. Like the toasted filled baguette rolls I blogged about not to long ago. Could be a disaster : )

What a precious dog ! I am sorry for your loss. The crepes look wonderful. I make buttermilk ones and they do freeze very well. Love them filled with lemon curd.
I will have to try your formula...I haven't put my Caputo in starter just in the finished product. Can you tell me what/why you use it in the starter ? What effect do you see ? Only for pizza ? I had linked the other day to Sourdough Surprises blog. They have tons of uses for starter and discard...if you have time go and check it out. My R uses it now in all his pasta making and it is fantastic. Glad to see you are back. Love your posts. c

Your crepes sound very delicious. I have always loved crepes since the first time I tasted some warm yummy ones served at a homestyle restaurant when I was very young.
I used up left over starter from my Ken Forkish pizza making, otherwise I don't really make a starter with this expensive flour. It's reserved for pasta and pizza and good Italian pastry recipes.
I will check out your recommendation for the SS blog. Sounds like a good one.

So sorry to hear of your loss. I suspect Katie had as good a life as any dog could hope for.
That's a lovely use of leftover levain (I envy your fresh fruits!). I've never gotten beyond hotcakes for breakfast. But....you're giving me ideas.

Crepe's are so versatile. I think filled with crème fraîche and anything else would be delicious. I would like some vanilla in the batter next try. I did make one with some fruit preserve that was pretty tasty. These came in pretty handy and tasty..but I would like to find a killer crepe batter recipe. I might try some with buttermilk like Carol makes...they sound delicious.

My heart goes out to you, Sylvia. To look at Katie is like seeing the long, lost sister of our little Indiana. We got her from a rescue as well and she is as sweet a dog as I have ever known. There is just something in those eyes...

So very sorry to hear about Katie,my condolences Sylvia. I can tell from the picture that she must have been a sweetie, just from the gentle look in her eyes.
Crepes are an item I really enjoy but for some reason forget to make these days. I remember when I was single that I always tried to keep a few in the freezer (they freeze well) for a light and quick supper. I've filled them with everything from leftover tuna casserole and chili, to BBQ pork, stir fried veg, and of course sauteed fresh fruit. Even deep fried banana filled crepes in batter once. Tasty, but not worth the trouble, crepes Suzette are much better. Thanks for the reminder with these luscious looking crepes of yours Sylvia. Now I just have to find where I put my crepe pan...

The savory versions are tempting to...chili...I don't know..I think I would have to put it in a cornmeal crepe...Oh, would that be a tamale 'lol'.
I came close once to getting a proper crepe make. Talked myself out of it but, I did like that stick thingie the way it worked on the crepe maker. I might just get a good crepe pan. Mike really enjoys them.
My favorite crepe is filled...I think that it is called a blintz but, not sure.
I'm going to whip me up a couple for an evening sweet tooth.
