sourdough pain de mie
I just got this awesome pan from amazon

And I had a lot of sourdough on my hand so I went ahead and made King Arthur king recipe at thie link

but I didn't use the biga I used my sourdough starter which was fed 24 hours before mixing. I used 15 oz and continued the recipe as it is.
It was awesome flavor and fluffness and right away made a sandwich :D
That's the one I have, and I make a double loaf of cinnamon swirl sourdough in it at least once a week.
Congrats on your new pan too! You put it to good use.
And they sent me looking for a recipe. I'm glad I found you. I've got to try this delicious looking bread in my new pan.
