I have a couple loaves of whole wheat bread rising at the moment and was wondering if I sprinkled a batch of rolled oats (breakfast cereal) over the tops of the loaves and then sprayed with cooking spray, would that work?  I'm worried if they'll stick and/or be chewy after being baked.  I see a number of loaves with seeds and oats or wheat flakes on the crust that looks cool, but I've never done it.  Suggestions?  ~ Russ

You need something that will hold the rolled oats in place while the dough rises and expands in the oven.

Use lots and back off after you have success in sight.

Agree on egg wash if it's this late in the game. 

If you're going to apply seeds otherwise, best to do immediately after shaping; if possible spray or dip in water and roll shaped loaf in seeds.

I had about 5 things colliding at once so I went the easy way and misted some water on one of the loaves, sprinkled the rolled grains on top, gave it another mist and in the oven it went.  Then poured the water in the steam tray and the kitchen is smelling oh so good.  I'll know in a while how it turned out.   Thanks for the input gang.  I have a much better idea now, how to tackle it the next time!!! Add it all when shaping!!  Have a great 3 day weekend (for those of you who do).  ~ Russ
