What do your local health inspectors require?
I use regular household cleaners. Mild diluted with water dishwashing soap for tables and then rinse by wiping with a clean wet cloth. Then mist/spray with a 10% vinegar solution and let air dry.
Thanks for sharing, I used to wash with vinegar, now I am trying soda solution.
I don't want to use store bought detergents, as I worry they will leave something after cleaninng. It is harder to wash them off the tables. I make my own soap and use it sometimes.
I wipe tables and wash floor with clean water every day after baking. I also take one day free of dough to clean thoroughly.

Maybe my "regular household cleaners" was too ambiguous. I have limestone floors and Formica and granite work surfaces. I cannot spray my floors with vinegar or they would dissolve. Steam is also an option.
What kind of floors and tables surfaces do you have?
