conversion fresh to packaged yeast
i've read many different ways to convert a reciepe that uses packaged yeast to the fresh yeast that i have. My home scale broke so i usually just approximate 2ts fresh to 1 pack dry active. So far has always turned out ok. kepping in mind Im at home so my batch is small. i imagine if i tryied a bigger batch the possible mistake would be magnified. Any thoughts?
Not sure if this will be much help since your scale is broken but I have created a yeast conversion calculator that will convert from fresh yeast to active dry and vice versa. You may be able to use it to get a general idea of ratio's and apply it to volume measurments.
